1. First we will prepare sabudana. So, take 1 cup sabudana in a bowl and wash it thoroughly with water for at least 4-5 times. Now soak them completely in 1 cup water for 5-6 hrs to make them soft. After around 6 hrs sabudana should aborb all water.

2. Now check if sabudana is ready by pressing between the fingers, if its easy to mash then its ready and if its not soft enough add little more water and let them soak for few more hours. Just be careful its important that sabudana should not have extra water, otherwise khichdi will be soggy.

3. Now lets start making sabudana khichdi so add 1 tbsp oil to the pan. When oil is medium hot, change heat to low and add ¼ cup peanuts and stir them for 2-3 mins till they are nice brown. We are using peanuts to give nice crispy taste to sabudana khichdi.

4. Once they are fried well, remove them from pan. We will use them later in the recipe.

5. Now in the same pan add 1 tbsp oil and when its hot add 1 tsp cumin seeds. When they start spluttering put heat to low and add 1 tsp chopped green chillies, 1 cup boiled and cubed potatoes and finally add little salt according to potatoes. Now mix them well and cook for around 1 min on low heat.

6. When potatoes are cooked add soaked sabudana, fried peanuts, ¼ tsp red chilli powder, ½ tsp salt or according to taste, 2 tbsp lemon juice and 2 tbsp chopped coriander leaves. Now mix them well.

7. Once mixed well, cover the pan and leave it for 2 mins on low heat, so that sabudana absorbs all ingredients and is cooked well.

8. After 2 mins open the pan and mix it again. You will notice sabudana has become little transparent and this is the sign that sabudana has cooked well.

9. Now sabudana khichdi is ready, so switch of the gas and take it out in a bowl to serve it hot.
